The anchovy is a small sea fish that lives in enormous shoals in the open sea. Some populations are concentrated near estuaries and others stay in the open sea.
The anchovy is present in all the seas of the world and is particularly common in the South Pacific (Peru, Chile), in the South Atlantic, in the Mediterranean, and in the Indian Ocean (Malaysia, Indonesia). Our Martel flat fillets of anchovies come from Chile. The cold Humboldt current, which flows northward in these parts, is very rich in zooplankton, and accounts for its abundance. Preserved in salt and olive oil, these little guys are very flavorful, meaty, and boneless. Not overly salty in flavor, these are great for everyday use in the kitchen. (The tin comes with a handy plastic lid to keep them fresh after opening).

The long, storied history of the Portuguese fishing industry is well respected around the world. Unmatched in quality, these outstanding sardines, Pilchardus Walbaum are collected from the waters just off the shore of Portugal. They are caught between May and November, when sardines are at their best. Only fresh fish is allowed. The process involves manual cleaning and very careful handling, followed by the traditional cooking in a grill oven before being canned. Available in four varieties: olive oil, spicy, tomato, skinless and boneless in olive oil. Serve these delicious sardines as hors d'oeuvres during cocktail hour or as an appetizer before the meal.
