Made in the French town of Brie, Boursault is a very popular double cream cheese that is frequently found in grocery stores across France. Boursault, the cheese, was invented in 1953 by Henri Boursault, and was originally made in eight ounce drums. The company is now owned by Boursin, which makes relatively well-known spreadable, herbed cheeses. We sell this rich, creamy delight in a 6.3-ounce drums, which is a good size for a cheese with butterfat content as high as 74%. For those of you who gasp at that number and grab onto your chests, just remember,“fat is flavor”. This cheese is worth every tiny bite, and besides, it could be worse. In the 1950's, a category of cheeses called triple creams was created and defined as any cheese containing at least 75% butterfat. (Keep in mind that butter typically has about 80% butterfat.) This level is achieved by adding pure cream to the milk used to make these cheeses. Explorateur, produced in Ile-de-France, is one of these cheeses with its 75% butterfat content. We have chosen to carry a very small size of this cheese. Because it is so rich, a little bit goes a very long way, and unless you have several friends with whom to share a pound or even half a pound of these cheeses, they will usually go bad before you can eat them all. Like all triple creams, this cheese can be eaten at nearly any stage of ripening. As the cheese ages, its interior with go from a chalky, firm, pristine white to a runny, yellow to beige mass with a much more intense flavor. Each stage is delicious in its own right.- Made from cow's milk.

Made in a town with the same name since the early 14th century, Chaource is the most famous artisanal cheese from the Champagne region of France. This decadent cheese is delicious at any stage of ripeness and has a slight mushroom scent with a rich, creamy flavor. It is not dissimilar to Brie or Camembert, but it has an even creamier texture, especially when aged. The cheese is made in miniature wheels that give it an elegant appearance for service with champagne.- Made from pasteurized cow's milk.

In 1957, Wilhelm Huber opened a small butcher shop in Waterloo, Ontario, using family recipes and traditional European meat processing methods. Five generations later, Piller's Black Kassel is still family owned and operated and is still using Wilhelm's techniques and recipes. We offer 3 German style sausages:- Gypsy Salami: Made from a fine blend of pork. The addition of cayenne gives this salami a semi-hot spicy flavor. It is gently smoked for 7 days and air dried a minimum of 28 days.
- Mustard Seed Salami: Made from a lean mixture of pure pork with finely chopped mustard seed and a hint of garlic. It is gently smoked for 7 days and air dried a minimum of 28 days.
- Old Forest Salami: This salami is a lean blend of ground pork that is gently smoked over natural beech and maple hardwood for 7 days and air dried for a minimum of 28 days.

Brillat Savarin is native to Normandy and is named after the man who is known today as, "The Father of Modern Cooking".
