Liguria is a region in the North of Italy famous for its Riviera which runs east and west of Genoa, from the city of La Spezia on the east to Ventimiglia on the west, bordering on France. It is a thin strip of land along the Mediterranean, 165 miles long, 65% mountains and 35% hills. The Western Riviera is known throughout the world for its mild climate and splendid natural, beauty. It is a Mecca for international tourists.
The region, equally famous for its exceptional fruit and produce, enjoyed an exceptional olive harvest in 1911. The trees in the Carli family's grove were very heavily laden with olives. Such was the abundance of the crop that Giovanni, the youngest of the family, decided to sell some of the family's olive oil in the farming villages of Piedmont, the Italian region bordering on Liguria to the north, on the other side of the Alps. He returned home with so many orders that he engaged his sister and three brothers to join him in the enterprise and thereupon created the Fratelli Carli organization.
Today, along with their fabulous olive oil, they have branched out to showcase some of the other wonderful produce of Liguria. Using their high quality extra virgin olive oil as the base, they have created two great new vegetable patés: Artichoke Heart Paté and Sundried Tomato Paté. These spreads are so fresh tasting. Just open the jar and the smell and taste will transport you back to Italy. Use either pate to add flavor to vegetables, fish or meat, or simple serve with fresh, rustic bread. Tapenade is essentially a thick olive paste. It can be made with additions that include capers, anchovies, lemon, and even chunks of tuna. Fratelli Carli's Paté di Olive is simply made with carefully ripened olives and extra virgin olive oil that are puréed until smooth, leaving it with the clean, pure, fruity flavor of olives. As the label says, Olive Nere in Salamoia is Italian for “black olives in pickling brine”. Fratelli Carli uses a traditional recipe for brining their black olives that allows them to maintain the rich, fruity flavor that you find in high quality olive oils rather than the overly sour flavor of many inferior olives packed in brine. The olives are allowed to mature to the point of full flavor before they are picked from the branch and then preserved to maintain all of their natural savor and aroma. This preservation is done using only water, sea salt, and natural Mediterranean aromatics, such as rosemary, thyme and bay leaf. |

This is our "1 Leaf" Balsamic. Pliny the Elder, the famous Roman naturalist, (70 A.D.) said "Vinegar possesses great merits for its many uses, without which life would lose its pleasantness". Fine Balsamic Vinegar of Modena is the masterpiece of the vinegar world. In recognition of the extraordinary nature of this product, the Italian government has adopted legislation defining its characteristics and production process. Unlike wine vinegar, which is made from wine, Balsamic vinegar is made from fermented concentrated grape must (grape juice), and gets its dark color and pungent sweetness from aging in oak barrels over a period of many years. Compared to more pedestrian vinegars, Carli's is quite aromatic and flavorful. It is a sweet and delicious vinegar that is the perfect complement to Extra Virgin olive oil over salads. Note: this product contains sulfites, which are added to inhibit the growth of unfavorable, flavor-detracting bacteria. |
