This reserve stock, slow-ripened Asiago is aged for a full year as opposed to regular Asiago d'Allevo's six month span. As a result of the additional maturation, this cheese takes on a distinct but pleasant sharpness with hints of butterscotch. Its texture is firm enough to grate, yet allows it to be served as a delicious table cheese as well. We recommend this cheese as part of a traditional northern Italian meal, grated over risotto, polenta, or pasta.

This is a must have cheese in the fridge. We purchased for a gourmet dinner club and it was devoured...it brought back memories for one of our European friends who used to eat the same cheese growing up in Italy.
So yummy.

Love the creaminess of this cheese. Asiago melts so wonderfully anyway, but this selection is really yummy. We use this in our manicotti and melted over tortillas. So good.

I use grated cheese a lot in cooking and on various dishes. This is the first time I have tried this brand and found it to be very tasty. It was a bit difficult to grate; I might try the less aged one next.

I consume quite a lot of cheese and have purchased many cheeses from this vendor and this is one of the best, so far. My vegetable garden has gone into overdrive and I need to find new flavors to enhance the veggies. I have used this cheese with risotto, grated over a casserole of eggplant, peppers, summer squash and tomatoes, sliced thin and layered in a strata with tomatoes, artichoke hearts and green beans and in omelets. It "marries" well with all these flavors and I will certainly order more. I do prefer the pound cut and would like to see more cheeses offered with this option
Unpasteurized and unspoiled

I'm health conscious in that I used natural products and eat home grown fruits and veggies and local organic meats and dairy. I believe in using cheeses that have been unsullied by pasteurization and are more like the ones my grandfathers enjoyed. The unpasteurized list at[@] continues to grow, and so do my orders.
