Pyrenees Vache with Green Peppercorns is quite mild with a fresh, lactic, yogurt-like taste. Beneath its black wax rind lies a pale-white interior dotted with small holes and unevenly distributed chopped green peppercorns. As with other semi-soft cheeses, like Doux de Montagne, Asiago Pressato or Butterkase, this cheese has an even-tempered, buttery flavor. When allowed to come to room temperature, this cheese becomes even softer and butterier. It melts exceptionally well over low heat, giving your hot sandwich or burger a gourmet touch. On its own, Pyrenees Vache is a bit too mellow for our liking. But with the addition of green peppercorns, the cheese livens up, providing a peppery bite and a bit of personality that would be missing otherwise.

The only time we ever got Pyrenees was when we went to France or a family member from France brought it here. The exclusivity made it a very delectable treat. Now that we can purchase it anytime, being that it tastes almost exactly as the french version, it takes nothing away from the flavor! I would highly recommend it, especially in conjunction with Saucisson Sec.

Honestly did not care for this. It starts out "interesting" but develops quite a bitter taste. Aftereffect on the palate was unpleasant.

The Pyrennes Vache with the Green Peppercorns has become a favorite. The spicy flavor of the Green Peppercorns is perfect combination for the relatively mild Vache cheese.
great with white wine

I first tried this cheese at a winery in Washington State with a chilled white wine. The wine and the cheese brings out the flavors of each other. The green peppercorns kick it up a knotch (it is good without peppercorns also). This is one of my favorite cheese to have with wine. It is a much for a cheese and wine party.
