Made from a centuries-old recipe, 70-pound wheels of Gruyere de Comté have been produced since the reign of Charlemagne, when there were no separate entities named France and Switzerland. Comté has the highest production figures of all the French AOC cheeses, as cheese makers work to satisfy the world's hunger for this exceptional cheese.

Although Swiss Gruyere may be better known, the French variety is no less special. Created by local villagers in alpine dairies called "Fruiteries", its milk comes from Montbeliarde and Tachete de L'est cows. Contributing to Comté's unique flavor, morning and evening milkings are mingled before the cheesemaking process. For transforming the milk into curds, the cheesemaker only uses natural ferments to receive the Comte seal. During aging, the curd is cooked, then pressed, with a natural brushed rind that comes from weekly care.

When it comes to acquiring flavour, Comté cannot be hurried. These Reserve wheels are aged for one year, resulting in a sweet and nutty masterpiece with less bite than its twin from Switzerland. Distinguished by a black label, this Comté is hand-selected by Entremont, ensuring the highest quality.

Comté has a satiny, ivory-colored body and a scattering of holes the size of a hazelnut. A traditional fondue cheese, Comte can also be shredded, sliced, grated, chunked or melted. This is not a cheese that always tastes the same. Each round of Comté reveals differences in the composition of its flavor, depending on the micro-region where it was produced, the season, the particular technique of the cheese maker, and the cellar where it was matured. It can always be called upon and never disappoints, whether as a table cheese or in a gratin.

I was preparing several quiche for the holiday dinner. I had 3 different Gruyere in my possession. For a Gruyere that is buttery, soft, flavorful this one is #1.
How this Gruyere compares to some others sold here.

I eventually plan to try all of the gruyere's offered by iGourmet, so I started with the regular, pound cut gruyere that I've bought many times, then this Gruyere de Comte Reserve and the Gruyere de Comte. The differences are subtle, but they do exist. The Comte and the Comte Reserve are both a bit creamier than the regular gruyere, which has a strong nutty flavor that I love. The Comte has a taste of sweet cream that is not so evident in the basic gruyere and has a brighter, slightly sharper taste. The Comte Reserve has a deeper, rounder flavor that is a little sharper and has a finish reminiscent of fresh grass. I added a little of both Comte and Comte Reserve to a batch of gougere that I normally make with just the Gruyere, and there was a distinctly sharper taste when it was baked. It really brought out differences that were not as evident in tasting cut slices of the three cheeses. If you want the strongest Gruyere flavor, your best bet is the Gruyere de Comte Reserve.

Well, in this HOT HOT weather, the first one arrived totally rotten. IGourmet immediately sent me out another one, and the taste is AWESOME! I would recommend this to everyone. Makes the best Mac and cheese ever.

Oh my gosh, this cheese was so good that my husband was only able to get one slice. All you need is a knife and some yummy italian bread and you have a great meal!

This cheese is truly exceptional and delicious. I ordered quite a few cheeses but this one did not last 15 minutes at a family gathering. It also came nicely packed by the company. I will be ordering this again!
