This certified organic semi-pearled comes from Italy specifically the Mugello region of Tuscany. Farro is the world's original grain from which all others derive, including rice, barley, wheat and rye. Because it is hard to grow, farro almost became extinct after World War II. However, it is now making a big comeback, especially in Italy where the top restaurants feature it in soups and side dishes. It has a pleasant nuttiness and a hardy texture. Naturally high in fiber, protein, and B-vitamins, it is also very low in gluten, which is good for those who are allergic. Farro grains look like brown short-grain rice, but each grain retains a firm, chewy texture even after overcooking.

Equinox Organic Maple Flakes are an all natural ground breaking maple product. Delicious and crunchy, this seasoning is a new way to add the sweet taste of maple to your dishes. A syrup dehydration process makes it all possible. By skipping the crystallization step, this new method produces Equinox flakes with all the best qualities of pure Canadian maple syrup, but in an exquisitely sophisticated, dehydrated form.

They can be used as decorative condiments or to add a delicate hint of maple to appetizers, entrees, or desserts. The crispy texture also adds extra dimension to your dishes.

The handy Equinox Grinder allows you to select a fine or coarse grind for the flakes. Buy our Maple Flakes in Maple or Cranberry Maple (item 7277) when you need to refill this useful mill.
  • Certified Organic by Ecocert Canada
  • Certified Kosher Pareve (MK 804)
  • Equinox flakes have never been in contact with allergens.
  • This is a completely natural sweetener, unrefined and preservative-free (3 times fewer calories than the same quantity of refined sugar!).

Rice farming was brought to the wetlands of the Spanish Mediterranean coast by the Arab invasion of 711. Today, Spain is only second to Italy in rice production in Europe. Calasparra is well known in Spain and worldwide and was the first rice to be awarded with the Denomination of Origin, a guarantee of the finest quality. Calasparra is the quality identification for the southernmost rice growing area between Murcia-which borders in the north with the Valencian community and in the south with eastern Andalusia and Albacete in Castile-La Mancha. There are thousands of rice varieties in the world and they are categorized by grain length. Our Calasparra rice is a short grained rice. Short grained rice is also called pearl rice because the center of the grain has a white mark that contains extra starch. The pearl flavors the other ingredients and absorbs the stock. This is essential for a successful paella. This rice is difficult to overcook and does not stick together. Great news for anyone who has problems making the perfect rice.

Israeli Couscous was created specifically for the Israeli market in the 1950's during a national recession. Made of hard wheat instead of semolina, it has become a staple of the Israeli diet. This couscous features large granules that hold a sweeter, nuttier flavor, which is achieved by a toasting process that caramelizes the starch. This allows it to absorb liquids while remaining “al dente”. It makes a perfect side dish to meat, poultry or fish. It is also delicious as a main course; mixed with vegetables; or with your favorite pasta sauce. It is also great as a cold pasta salad.
  • 10 minute preparation time.
  • Certified by Rabbi Jacob Moshe Charlap-Osem Isreal- Kosher Parve.

Kalijira, the Prince of Rice, is an ancient long grain white rice on a miniature scale - like baby Basmati. It cooks in only ten minutes, producing a delicate aroma, taste and texture. Grown in Bangladesh, Kalijira is usually reserved for special holidays and religious festivals. Today, you can enjoy this exotic rice every day or as an alternative to Basmati, especially in making pilaf. The best tiny, aromatic rice in the world.
