The rest of the world savours Parmigiano-Reggiano as a delicious, full-flavored eating cheese. It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". We experienced a moment of culinary divinity when we first sampled this double-aged Gouda. Previously, we doubted that any cheese could be more flavorful than Beemster's 18-month Aged Gouda, but their X.O. indeed sets a new bar. With this 26-month gouda, we first noticed its delicate, brittle texture. Bigio is a unique sheep's milk cheese brought to us from Italy by Il Forteto. This semi-hard cheese is traditionally matured for five months and then matured under ash for an additional two to three months. This method of aging is done to speed up the process, according to an old farmer's tradition, and continues today. While ripening under the thick layer of ash, moisture is absorbed, both preventing the formation of mold on the rind and removing acidity, leaving a sweet and tasty pecorino cheese. Bigio is a versatile cheese, hard enough to grate yet excellent served sliced or chunked as well.- Made from pasteurized sheep's milk.

French Mimolette, also called "Boule de Lille," dates back to the reign of Louis XIV, who prohibited the import of Dutch cheeses into France. The residents of Flanders had strong cultural ties to Holland and dearly loved the banished Dutch specialties. Their alternatives were to either smuggle in contraband cheeses or produce their own. Thus, Mimolette was born. Aged Mimolette is a hard cheese that has the same texture and spherical shape as Dutch Edam, but with a natural rind. It is produced in nine pound spheres containing a bright orange interior. Because of its hue, it is sometimes called "Halloween Cheese." It tastes gloriously sweet, yet uncommonly tame for a French cheese.
Aged Mimolette, popular throughout France, is a dense cheese, hard enough to be grated. Enjoy it chunked or served with a hearty bread and fruit.

Canestrato Pugliese owes its name to the baskets in which this sheep's milk cheese from Puglia is set to ripen. Baskets are among the most typical products of Apulian artisans, along with terracota and woodwork. Made from the Apulian reed, which lends a sweet taste to the cheese, the basket is an integral part of the manufacturing of this respected cheese. The basket produces this cheese's signature crinkled rind as well.
The ewes that are milked to produce Canestrato Pugliese are only allowed to graze on Apulian green grasses. They are milked twice per day, so that the milk retains its micro-elements and has a richer, fuller flavor. Well-known in Southern Italy, Canestrato Pugliese is a very rare specialty item anywhere else in the world. - Made from pasteurized sheep's milk.

Based in Busche, a town in the Province of Belluno, Italy, Lattebusche is a cooperative that has been active in the dairy industry for more than 40 years, best known for producing Piave. Busche is a pristine area rich in grazing land that has always been naturally devoted to cattle farming. Characterized by extremely cold weather with plenty of snowfalls in winter and short, cool summers, the Province of Belluno is a typical alpine environment.
Caprino is made from a blend of goat's milk and cow's milk, and with the addition of black peppercorns, this cheese has a distinctive flavor. The expert blending of the two milks and the careful aging give us a cheese that is aromatic with hints of the acidity of the goat's milk, yet which still retains all the sweetness of the cow's milk. Sweet when young, it becomes more and more intense with age. It can be eaten on its own as a second course, cut into cubes to prepare salads, or used as a decoration for starters made with raw vegetables. It is produced in Central Spain's La Mancha region; a territory known for its fierce winds, violent temperature swings, and desert-like aridity. Sardinia is one of the least populated regions of Italy. Natural pastures cover more than half the area of this secluded Mediterranean island. Sheep and goats are widely raised on Sardinia's beautiful hilly interior where herbs such as rosemary, sage, myrtle and juniper grow wild. This is where Sardoformaggi (established in 1963) gets its milk for Capradoro. A rarity among Italian cheeses, Capradoro is an aged goat's milk cheese. This hard, flaky cheese has incredible floral notes and a refreshing lemony tang. Pecorino is the generic name for Italian sheep's milk cheeses. This special pecorino comes dotted with red peperoncino flakes that give it a moderate spiciness that tickles the back of your throat without setting your mouth on fire. The peperoncino is an Italian red chili pepper that is shaped like a finger and about as hot as a jalapeno. Aged for over three months, the cheese has a firm texture that makes it a good candidate for slicing or grating. People who like spicy cheeses like PepperJack might find our Chili Pepper Pecorino to be a sophisticated alternative.
