Dubliner was first described to us as a mixture between Cheddar and Parmigiano Reggiano. This description is quite accurate. Dubliner is a robust, aged cow's milk cheese with a bit of a hard
texture similar to a Cheddar. In one bite you can taste the diversity of
flavors - from nutty to sharp to sweet. What might seem ambiguous is
actually a well-balanced mix of cheese cultures and naturally occurring
amino acids. This diversity pays off in its ability to be served
alongside a full-bodied Cabernet, a freshly pulled pint of Guinness, or
simply melted between a few slices of crusty brown bread.

Award winning cheesemaker Jorge Mariano Gonzalez handcrafts and inspects every 60 pound wheel of Fiscalini Farms' bandage-wrapped raw-milk cheddar. It is quite rare for an English-style farmhouse cheddar like this to be produced in the U.S. All natural ingredients are used in the cheesemaking process. Made from Fiscalini's own milk and aged for 18 months on the property, this cheese was voted "Best Farmhouse Cheese" at the 2002 American Cheese Society Awards in Washington D.C. It is a wonderful example of the success of the artisan cheese movement in the U.S. today. Rich, buttery and sharp, Fiscalini Farmstead Cheddar is a world-class cheese.- Fiscalini Bandaged Wrapped Cheddar was awarded a Gold Medal at the 2007 World Cheese Awards in London. Robert F. Hart began making this fine Canadian cheddar in 1933. Today, Black Diamond is probably Canada's most well-known cheddar. The "Grand Reserve" signifies that this cheddar is aged a minimum of two years.
