In New Zealand, rich fertile valleys watered by pure mountain streams and soft, gentle rain create endless grazing pastures of lush, sweet green grass year round. This, plus a cool temperate climate ideal for the slow natural aging of the finest cheddar cheese, gives Mainland its unique and distinctive flavor.

Hand selected by Mainland's Cheese Masters and set aside to age naturally for 24 months, this cheddar has strong piquant flavors with a hint of cream in the finish and a crumbly texture which can only be achieved with the finest of cheddars. Pair it with a dark ale, Port or red wine, served on the deck in the summer or in front of the fire when it's cold outside.

Dubliner was first described to us as a mixture between Cheddar and Parmigiano Reggiano. This description is quite accurate. Dubliner is a robust, aged cow's milk cheese with a bit of a hard texture similar to a Cheddar. In one bite you can taste the diversity of flavors - from nutty to sharp to sweet. What might seem ambiguous is actually a well-balanced mix of cheese cultures and naturally occurring amino acids.     Award winning cheesemaker Jorge Mariano Gonzalez handcrafts and inspects every 60 pound wheel of Fiscalini Farms' bandage-wrapped raw-milk cheddar. It is quite rare for an English-style farmhouse cheddar like this to be produced in the U.S. All natural ingredients are used in the cheesemaking process. Made from Fiscalini's own milk and aged for 18 months on the property, this cheese was voted "Best Farmhouse Cheese" at the 2002 American Cheese Society Awards in Washington D.C.     Robert F. Hart began making this fine Canadian cheddar in 1933. Today, Black Diamond is probably Canada's most well-known cheddar.
