After a long wait, we finally bring you chorizo cured in Spain. You will immediately notice the difference between this chorizo and domestic imitations. Palacios, a company based in Logroño, the capital of the La Rioja region, earned permission from the U.S. authorities to export chorizo to the U.S. in 1997, but it wasn't until 2001 that it started entering the country in any significant quantity. Palacios Chorizo does not contain any preservatives or artificial colors; just pork sausage cured with paprika and garlic. They use a traditional process, using a secret 30-year-old family recipe. Its meat and natural ingredients are carefully selected, creating a smoky, earthy, sweet and tangy sausage.
Finally, Americans can enjoy one of the true culinary treasures of Spain! Chorizo is excellent in stews, potages, omelets, paellas, or served as part of a tapas. While the origin of the word is not disputed (literally meaning lid), the origin of tapas as the feast of many small dishes is highly debated. Some claim tapas came to be when a Spanish king was instructed by his physician to eat many small meals a day. Others claim tapas were simply small dishes placed on top of wine glasses to keep flies away. Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry; unfriendly to cows but suitable for raising goats and sheep. The abundance of wild herbs on Central Spain's grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant ,while its texture is firm but not dry. Manchego can be recognized by the zigzag pattern etched into its rind. This is created by the rippled surface of the press used in the manufacture of the cheese. Underneath the inedible rind, the interior is ivory colored with few small holes. Taste Manchego for the first time and you will be surprised at how long the wonderful flavor lingers on your palate. It is an experience you will be drawn back to again and again.

Bonito is a breed of tuna that swims near the shore off northern Spain. This dolphin-safe white meat tuna fish is the most valued fish in Northern Spain. There, bonito are caught by fishermen lining the shore, using bamboo rods with long lines. Many small, traditional boats also fill the bay, coming back to port to take their catch to the fish markets. At dawn, the best tunas are separated from the catch and prepared the very same day. This product from Serrats is only made from bonito caught from July to September, when the white tuna fishing season becomes a real economic and social event in the riverside villages. A tremendous leap in quality from the regular tuna you get at the supermarket, note that this tuna is packed in olive oil in whole fillets, not mashed up slivers like most others. Once you taste this exquisite product, your opinion of tuna will change forever. |

A genuine cheese from the La Mancha region, this artisan Manchego originates on small Spanish hillsides where La Mancha sheep flocks graze. The small-scale, artisan production of this Manchego by Dehesa de los Llanos yields an exquisite cheese that is hand-formed, wrapped, and salted over a 24 hour period. Dry cured for one year in an eighteenth century cave, this Manchego has a robust flavor reminiscent of the Mancha countryside.
