The wild marshlands of France's Provence, Le Camargue, are home to the hearty grain called Riz Rouge (pronounced "ree rou-gh"). This beautiful rice has only been known in culinary circles since 1988, when it was discovered in Provence during the blustery winter months. This healthful, whole grain rice has a luscious flavor, firm texture, and a sweet finish on the palate.

Please note: When cooking, use 1 cup of rice to 3.5 cups liquid, rather than the usual 1: 2 ratio for white rice. Simmer 25 minutes.

This rice is delicious! A friend had given me some, and I needed more for a special dinner. I was thrilled to be able to find it at 1gourmet.com after a fruitless search at several upscale stores here in Chicago. I would suggest testing the rice after 25 minutes of cooking (see note in product description) and perhaps allowing a few more minutes of simmering, bearing in mind that this rice will always be chewy because it hasn't been hulled.

I found a recipe for sage rubbed pork, red Carmargue rice and flageolet beans in the cookbook from Oleana in Cambridge MA. Although I did the cooking on a very warm day, the whole meal was wonderful.

Great as a presentation, used it with fish. Has a great flavour and cannot imagine what it will not go with. Great to eat by itself as well. Easy to prepare.
