Monte Veronese is a typical Italian table cheese produced only with full-cream cow's milk. It is a semi-hard, semi-cooked, white or slightly straw-colored cheese with a scattering of tiny, diffused holes. Monte Veronese is aged approximately 60 days to create a sweet, yet delicate and pleasant flavor.

I think the shipment was delayed, and so the package came pretty warm, otherwise great!

Very light, sweet, and delicate. Hits the palette like a creamy parmigiano without any bitterness. Very much an "eating" cheese when paired with the proper wine/beverage. Very nice with a good South African Sauvignon Blanc or Australian Viognier. I could also imagine it well with a good meritage of Shiraz & Cabernet Sauvignon or Shiraz &....., may be a little too delicate for a straight Shiraz. Lends very well to peppery noted wines that will finish smooth. Would also do well with many teas that flavor consists of a citrus and mildly spicy notes.

The mild flavor, although clean and slightly nutty, was underwhelming. Will use in risotti, on lightly sauced paste, verdure. Not an eating cheese.
