The generic name for this cheese is Ossau-Iraty, which refers to two rivers in the Basque region of France - the homeland of this spectacularly delicious cheese. Also called Brebis Pyrenees, which is simply French for Sheep Cheese from the Pyrenees, Istara has a smooth, slightly oily texture and a wonderfully sweet flavor with hints of olive, hazelnut and fig. Aged for 90 days.

This is the best cheese with red wine. No cracker - cheese only with a sip of the red. It will melt in your mouth!

The family which received this cheese for Christmas reported that they liked it very much.I did not know this one but am fairly familiar with other cheeses from the Basque country and wanted to include something "new" in the gift.

This cheese is one of the best one from the Pays Basque! We love it and the best way to eat it is with black cherry jam. A real delight! Try it, you won't regret it!
