Queso Cabrales is a natural cheese made in the artisan tradition by rural dairy farmers. This cheese can be made of pure cow's milk, but, depending on availability, it can also be blended with some goat and/or sheep's milk as well. All the milk used in its production must come exclusively from herds raised in a small zone of production in northern Spain. Cabrales is aged from two to six months in natural caves in the mountains nearby. In these caves, the relative humidity is 90% and the temperature varies between 45 and 55 degrees Fahrenheit. These conditions favor the development of penicillium molds, yielding veins of blue-greenish color. Cabrales is sharp and tangy, and even more so when made with mixed milks. Like Gorgonzola and Roquefort, it is a famous blue cheese whose name is often copied by inferior competitors.

Note: Contrary to popular belief, all imported Cabrales is wrapped in aluminum foil, not leaves (due to EU regulations). Spanish blue cheese wrapped in leaves is either called Valdeon or Picon.

What’s the best way to store my cheese?
The best way to keep cheese fresh is to store it in the vegetable crisper in your fridge. Before doing so, wrap in parchment or wax paper, then wrap loosely in plastic wrap. You can also buy our exclusive cheese storage bags, specially created to keep your cheese fresher, longer.

Unless used for cooking, we don’t recommend storing cheese in the freezer as this will alter its texture.

What is the best temperature to serve my cheese?
Remove cheese from the fridge an hour before serving, as cheese is best experienced at room temperature to enjoy the full spectrum of flavors.

How long will my cheese stay fresh in the refrigerator?
The length of time cheeses last in the fridge after opening depends largely on the type of cheese. Soft varieties tend to spoil more quickly than hard varieties. Please refer to the table below for a convenient reference:

FreshWave Packaging

Our products are always shipped so they will arrive at your door in optimal condition! We’ve carefully selected packaging options that have minimal impact on the environment without compromising on food safety or quality. 

For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.
