This unique cheese, sometimes called Glarner Schabzieger, has a mysterious green hue. This color is due the addition of clover (blue fenugreek) to the cheese. Not only does this herb add an interesting tint, it also gives the cheese a unique sharpness. Sap Sago is made to be a grating cheese, and is not commonly eaten straight. It is excellent grated over steamed vegetables, especially cauliflower, broccoli or potatoes. In Switzerland, this conical, fat-free cheese is often grated and blended with butter to create a piquant spread for bread or crackers.

Happy to find Schabziger
Schabziger is such a treat for us and living in OK it is somewhat difficult to find. We serve it several ways, but probably our favorite is simply grated over buttered pasta. Thank you igourmet!

Schabziger/sap sago
Well, I was born in the area where the "Schabziger" is made. It is the same as 60 years ago,an I still like it. Just to mention: In Switzerland the sap sago is very regional and I guess more people in U.S. eat it than in Switzerland. Was glad to find it here! Bought 3 of them because one can easily store them for 3 years in the freezer.

We have been buying this cheese for at least 18 years. My wife puts it on lots of stuff and really loves it. Difficult to find in regular stores so happy to find it on the Gourmet web site.

I was very happy to find you carried Sap Sago. A wonderful addition to my cheese recipes especially Fondue. We always added some to our Fondue so now we have it again. The other cheese was also appreciated .

Sap Sago dry green cheese
This a difficult cheese to find. I use it in salad dressing recipes for fat free flavor.It lasts a long time because it needs to be finely grated. I hope you continue to carry it.

I have enjoyed this cheese for many years and have not been able to find it in my local. Good to find it again. It is a acquired tast to enjoy this cheese. I like it grated on bread and butter.
