The first wheels of Morbier ever produced were made from milk leftover from Gruyere de Comte production. The cheesemaker would press the leftover curd from the evening production of Comte into a mold and cover it with a thin layer of ash to prevent it from both drying out and attracting flies. The next day, he would add the leftover morning curd on top of the ash. The result is a two-layered semi-soft cheese with a complex fruity flavor and a slight tang. The two layers of the cheese have slightly different flavors, with the layer from the evening milking tasting fruitier than that from the morning milking. The ash not only separates the two layers of the cheese, but also serves an aesthetic purpose as it makes a dramatic presentation. Morbier is made using pasteurized cow's milk and has a complex, bold flavor. Its yellow-ivory interior has a smooth texture, wrapped inside a creamy-brown crust. This cheese pairs well with French Saucisson or is great on a sandwich made with a crusty bread. It also melts beautifully.

A good Eating Cheese
Good cheese. Wrapped well and arrived chilled on ice packs. A good eating cheese and great for sandwiches. - You will not taste any difference between the layers and you cannot taste the dark line. This is made the modern way now, and there is no ash or separate curd layers.

Lovely
Very nice soft cheese. Purchased along with several others as part of a cheese night celebration and this was one of those most remarked on by guests as being both new to them as well has having one of the best flavors.

SOOOOO CREAMY AND GOOD
This is one of the cheeses I get from igourmet to make my famous Mac and Cheese with Bacon. It makes the whole dish come together and gives it the creamy gooey goodness I want.

Delicioso!
I have been ordering cheese from igourmet for years and years, I have tried probably hundreds of their cheeses, but this clearly is my all time favorite. The combined flavors of the two different layers and the ash is something out of this world!

Lovely Surprise!
We were told that Morbier had been banned by the FDA and so were surprised to see it for sale....absolutely fresh and delicious. Ban must be lifted--thank goodness. Silly thing anyways. Arrived in the fresh-pack, which will be useful in the future. Fast service, professional and well packed.

A most affordable and flavorful cheese
The very reasonably priced cheese is highly recommended. The flavor is pronounced and distinctive, and if purchased, one will not be able to resist devouring it far sooner than recommended. It is simply addictive.

Lovely Cheese
This is a delicious creamy cheese. Though it’s made with cow’s milk, it has a rather “pungent” flavor to me, more like goat’s cheese. But I like goat’s cheese as well, so that’s certainly not an issue for me. I certainly can’t tell the difference in the “layers” as far as flavor. . .but. . . again. . . that’s not a big deal to me. If you’re worried about the ash. . don’t be. . . It doesn’t change the consistency and you can’t tell it’s there when you’re eating this cheese.

Always consisten good product and great service from igourmet
smooth and creamy a moderately "ripe" cheese great with a crusty baguette and a bold red wine. Also pairs very well with a dopplebock

pretty good
I am from France and morbier is one of my favorite cheese, but I can t find it in Austin where I live, and I can tell you this one is pretty good, not as good as some in France but it is à good compromise
