Many of us are familiar with feta as the white, slightly salty cheese that is crumbled into Greek salads across America. Feta is truly a great cheese for salads, but it is also a delicious table cheese and should not be overlooked. Feta is Greek for "slice", because feta is made in very large blocks, then sliced. A saltwater brine is then poured over the pieces to arrest the ripening process. Some feta is sold in jars, tins or tubs, submersed in its brine in order to keep it young and fresh.

Tangra Bulgarian Feta is made from pure sheep's milk from free-grazing ewes in the Rhodope Mountains. The name Tangra comes from ancient Bulgarian mythology, in which a deity named Tangra protected animals and promoted agriculture. Both creamy and crumbly, and not too salty, we are sure you will find this to be one of the best fetas you have ever eaten.

Perfect feta
This feta is creamier and less salty than the usual Greek feta. The piece I ordered arrived in beautiful condition and was the star of the salad. It works amazingly with cucumbers and ripe, heirloom tomatoes.

Not worth buying
I generally like most of the products from I gourmet but this was poor. Bulgarian feta should be soft and creamy not dry and hard. It should have a strong sheep flavor profile, this did not and had a medicine like taste.I have not been able to find any Bulgarian feta of the quality that I found years ago.

Not as good as I hoped for
I have eaten lots of Bulgarian Feta in my life. This one - perhaps because its vacuum packed and not brine stored, does not break or cut solid. It doesn't even crumble per se, more like "shatters" into tiny pieces. Home-brining it does not improve this condition. The taste is neither as salty nor as tasty as Bulgarian Feta should be. I would not buy again.

Love Bulgarian feta!
I first tried Bulgarian feta, when I purchased it from a fresh market at the West Side Market in Cleveland. My husband and I loved it more than Greek feta! We made a Bulgarian meal recently for family, and even our VERY picky 7-year-old niece said she really, really liked the cheese! That's saying something!
