If you enjoy our Vintage Canadian Cheddar, then you love this cheddar aged for another three years. This seven year old Cheddar is a firmly pressed cheese with a hard, homogenous texture. The cheese begins life with a flexible texture and slightly acidic, buttery sweet taste. The fat, protein, minerals and ashes gradually break down during the fermentation and aging process, which intensifies the flavors and firms and dries the texture. Made in Quebec, this Cheddar does not contain food coloring. Instead, it showcases a lovely, off-white color. Still full-flavored; more intense and tangier than its younger sibling. This is igourmet's oldest cheddar.

Excellent Aged Cheddar
Just what you would look for in an aged white cheddar--great crumbly texture without falling apart, just the right amount of salt crystalization on the surface, and rich layered flavor.

Still the best in show!
The first time I had this cheese, I was hooked. It was everything I love in a hard cheese: dry enough, flavorful, firm but not like a rock, and lots of crystals throughout. I love crystals! Wish I knew more cheeses that have them. This is my favorite cheese ever.

Really GOOD cheese!
I purchased 4 different cheddars, and this was a perfect cheddar. It was creamy but crumbled easily and had a few crystals in it to crunch and explode with flavor. Love it!

Best Chedder I have had
Everything I wanted and expected in a seven year aged Chedder,Rich flavor, fantastic texture, and special crunchy treats in each bit! My only problem was in what order to describe this wonderful cheese.....recommend highly! will be back for more!!

Quebec 7 Year Cheddar is A1
Oh the Quebec 7 Year Vintage Cheddar is great to eat with pears and apples which I did. This is one super tasty cheddar.
