The Black Summer Truffles (Tuber aestivum) spring up between June and October in northern Italy. They are found by specially-trained dogs who sniff out their hiding spots where they are then gathered by hand. The local mushroom enthusiasts each have a secret spot or two where they hope to find some of their own truffles from year to year. Creminelli has hidden a few of them away in their Salami Tartufo and you are sure to find them there each time you go looking. The truffles' delicate aroma works magic with the all-natural pork to create the Salami Tartufo.

Creminelli meats are handmade under the supervision of master artisan, Cristiano Creminelli. Cristiano insists on using choice cuts of meat from select breeds, fed with organic white grains and raised on small family farms. Organic spices are employed cautiously in the European tradition to complement and not overwhelm the flavorful, well-marbled natural pork. Cristiano does more than just follow the Creminelli family recipes. He carries on the Creminelli family tradition, part of an Italian tradition passed down from generation to generation. Now, the tradition lives on in America.

OUTSTANDING
I bought a large sample of salami/sausage from igourmet.com for a long boat trip with friends. There were two salamis that received everyone's highest praises - Wild Boar Salami by Creminelli and the Salami Tartufo by Creminelli.

I love the flavor of truffle and this salami does not disappoint. The taste is subtle but oh so good!
