Caciotta Dei Boschi
Caciotta Dei Boschi is an elegant table cheese made from scarce Roman sheep's milk and rare black truffle shavings. It is made by the highly regarded Lopez Company, a family owned and operated business that has been making cheese in the Roman countryside for several generations. Caciotta is a name used all over Central Italy that denotes a farmhouse sheep's milk cheese. This caciotta is quite tangy and sharp, as all chevres are, and highly aromatic with a distinctive, lingering aftertaste, thanks to the truffles. Caciotta Dei Boschi also contains bits of Porcini mushrooms, which serve to further augment the earthy character of this Italian masterpiece.
Made from pasteurized sheep's milk.

sour milk taste
I found this cheese to have a sour milk flavor so strong that it overpowered the truffle flavor. I ordered it with 2 other truffle cheeses, both of which I liked better. I'd recommend the Pecorino Tartufo over this one.

nice, semi-soft ewesmilk cheese
This is a simple, tart sheepsmilk cheese. The flavor of truffles and porcini is faint compared to Boschetto al Tartufo Bianchetto. It's also slightly sour compared to that other cheese, somewhat like mild yogurt.

Subtle delicate flavor
This cheese is a pretty mild flavored cheese, with the subtly and earthiness given by the truffles and porcinis. While not my favorite cheese, it's definitely worth a taste if you enjoy a delicate flavor.

I liked Boschetto al Tartufo Bianchetto much better
Typical semi hard sheep's milk cheese with mild acidity, slight aroma of black truffle. I liked Boschetto al Tartufo Bianchetto much much better. I tried many Truffle + Sheep and / or cow milk cheese and this is least my favorite. My friends and I were sampling 5 other cheeses I ordered from igourmet and no one wanted to eat this one since we had 4 other great choices. May be it was old since it had pink edges... I think I am going to eat it...

Cacciotta dei Boschi
The truffles give this cheese a very unusual flavor that I found absolutely delicious. It holds its form well. We ate it accompanied by a white wine. I think a red would overpower the truffles.

delightful cheese
a delightful cheese that goes well with rosemary roasted proscuitto and pinot grigio. that is they way i had it the first time in vegas. so glad igourmet has it, because it is something i would probably never find in virginia beach.might try it with watermelon next. i saw in wine spectator cheese paired with watermelon.

Give this one a try, you won't be sorry.
I was hooked immediately. Skipped my previous known favorite cheeses to keep tasting this one. It will be added to the list of party cheeses because it has a taste everyone enjoyed.

THIS CHEESE IS SO VERY TASTY WITH THE TRUFFLES IN WITH IT. VERY COMPLEX FLAVOR OF CHEESE. HIGHLY RECOMMENDED!!!!
