Place the roast on a rack in a roasting pan, fat side up. Place roast in oven for 10 minutes and then reduce the temperature to 250*F. Cook until a meat thermometer placed in the center of the fattest part of the roast reaches an internal temperature of 150*F. Remove from the oven and allow to rest 10 minutes before slicing.
