The newest creation from Paula Lambert, author of The Cheese Lover's Cookbook and founder of the Mozzarella Company is this luxurious Burrata. Their burrata is made in the style of Burrino in Northern Italy. It is a fresh Italian-style cow's milk cheese made by completely encasing a soft, creamy lump of sweet cream butter with soft, fresh mozzarella. Its name comes from its buttery center: burro means butter in Italian. It is a seductive cheese.

To make this burrata, the Mozzarella Company churns fresh cream to make sweet butter, then stretch cheese curds to make mozzarella. The mozzarella is hand-formed around a one-ounce piece of butter to conceal a soft, creamy center inside the burrata. Each and every step is done by hand. Finally the burrata is briefly immersed in brine before it is wrapped in parchment paper and packaged. The flavor is fresh, milky, and buttery.

Burrata
This just wasn't as creamy as the Burrata that we became used to during our living in Singapore. The upper tier italian restaurants all imported their burrata from Italy and they were superior to this, the center would run with the creamy taste when opened.

not the best ever
after having tasted this in Manhattan restaurants i have to tell you that i was very very disappointed. it was not fresh at all and it was not full of cream - only a little i could barely find it. [A note from igourmet: This cheese contains a soft, creamy lump of sweet cream BUTTER(Burro), not fresh cream as Burrata alla PANNA (cream).]

If eaten cold this cheese is fairly nondescript, but if allowed to get to room temperature it is otherwordly. I will deffinitely be ordering this again

Burrata
When sliced, the interior "butter" part was dry and crumbly, not flowing cream with hunks of butter as in the Italian variety, which is impossible to ship, but the type I've had from other vendors made in San Diego was much better. I won't be ordering this again.

Not your Mama's Mozzarella
I loved the burrata; but if you are expecting the typical ball of fresh mozaarella, this is not for you. The texture is much creamier and it definitely has a buttery flavor. I served it at room temp, with crackers and then in a Caprese salad. It was excellent in both. I will definitely purchase again.
