Jalapenos have thick, meaty flesh, with a high moisture content, making them prone to spoilage in the hot Mexican climate. By smoking and drying them, these peppers would last for months.

Hot But Good
The adobe sauce is what I like so much, not the actual peppers. It's thick, not watery; and it's tasty. I'd prefer the peppers were at least chopped and that there were no smoked taste. Regardless, the peppers, after chopping, and adobe sauce are both great served with other food, especially nachos and cheese. I'm not an expert on this type of food, but to me it appears well made.
