Lemony, tart, and tangy, this zesty goat cheese is aged in five-pound wheels where it develops a dry texture and sharp character. After an initial period of aging, the cheese is wrapped in walnut leaves to further develop the flavor. Soon, the cheese begins to take on an earthy, woodsy flavor to contrast against the sharpening flavor of the goat cheese.
Caciotta Capra Foglie de Noce is a superb example of one of Italy's few goat's milk cheeses. Make sure to shave this cheese thinly to savor its intensely developed flavor. It pairs well with cured meats, sweet fruits, and mixed into beet or endive salads.
The Perenzin family firm has been making traditional cheeses for the past four generations, winning a gold medal at the Brussels "Salon des Arts Ménagers" in 1933.
