Dairy Co-op Santa Rita consists of eight family farms located at Pompeano and Selva of Serramazzoni in the Modena Apennini Mountain. All of the farmers belonging to the Co-op have been applying the methods of biological agriculture and zootechnics for the last ten years. Proper tillage, scrupulous feeding, care and wellbeing for the cattle, and the refusal of any genetically modified nourishment are basic for the daily management of the farms. The eight farms in the Co-op are located within a few kilometers of each other, so when the milk is delivered to the Co-op, it is in the very best condition.

The milk from the evening is left to rest overnight in containers, letting the cream come to the surface in a natural way. This milk is partially skimmed in the morning and then mixed with the morning's whole milk. Only milk and rennet of organic origin are mixed in large copper kettles from which, after heating and coagulation, the wheels will be made. Every day, 10 wheels of Parmigiano Reggiano are made. For a kilo of Parmigiano Reggiano to be made, 17 liters of milk will be used. The cheese is immersed in brine for 21 days, then turned, cleaned and seasoned for 24 months.

We had the good fortune to sample this cheese at the SANA in Bologna. We were bowled over by the incredible sweet, floral, fruity fragrance and the rich, pure flavor. Clearly, the additional work needed to achieve an organic product, the small scale of the co-op and the unique flavor that comes from its mountainous territory pays off to create nothing short of a masterpiece.

I love Parmesan cheese, but have recently become aware of GMOs. I found this organic cheese and knew I had to try it. It is delicious! I keep it double wrapped in parchment paper, and then I wrap Saran wrap around that and then I put it in a sealed (air out) Ziplock bag. I weighed this block of cheese, when I got it. It actually was just over a pound. So they send a bit more than what the description notes. Nice surprise there. The packaging was great and I got this cheese fast. Yes, the shipping (to me) is a bit high, but due to the packaging, I completely understand.

WOW - FANTASTIC Parmigiano Reggiano
The Queen of Cheeses and hardly any organic choices available in the markets and when there is an organic choice it is dry and past its prime due to improper storage. It is one of the few foods that I was willing to buy conventional because of my deep love for it but it's kind of hard to find good Parmigiano Reggiano in stores because of the storage problem and they sell out fast when fresh wheels come in. Buying great organic cheese is a real challenge. Enter igourmet... Had visited the site in the past but never ordered before. My recent disappointment with cheeses bought at shops led me back to the site and I decided to buy 5 different organic cheeses to see if igourmet could do better and all I can say is YES THEY CAN!. This Parmigiano Reggiano is luscious and yet well aged. It has crystals but enough moisture to melt on toast. It represents its homeland well and I'm thrilled to have it in my fridge. Packaging was very good and the cheeses were in great shape. I'm amazed this worked so well and will be back for more. Igourmet is my new cheese shop. Just wishing for a selection of the best organic cheddars from America and Europe.

We only eat organic dairy products, because we don't want to drink growth hormone and antibiotics or have milk from cows fed GMO grain. This parmesan is fantastic- delicious with a wonderful texture. It's aged so the flavor is deep. Only downside is the expensive shipping.

Really Great Cheese!
We have searched for an ORGANIC Italian parmesan, since non-organic parmensan from Italy comes from cows fed GMO grain. Although it's illegal to grow GMO grain or import it for human consumption in Italy, you can still import it to feed livestock. So, if you really want to avoid GMO foods, you need organic parmesan. I was skeptical about this cheese, since every other organic parmesan I've tasted was awful. But this product is the real thing: sharp, tangy, complex flavor with a firm texture. My Italian husband loves it, and he's a cheese snob! We will be ordering more.

awesome cheese
I ate this with my own version of eggplant Parmesan in the toaster and it was great. It was also great eating raw. Towards the end I used a serrated knife like a cheese grater to deal with the hard rind part, no problem, it still was great there. I will order this one again.

You get what you get!
When ordering parmigiano cheese, you're given several choices. I selected one and had to wait because it was out of stock. Not a problem, I just put it on my wish list. I waited for two or three weeks before contacting igourmet to ask when my cheese might be back in stock. I was told they expected it the next day. It came in and I ordered it. The product I received was not what I ordered. When I asked why, I was told I got what I asked for. While the product is perfectly usable, I just really resent being treated like a dumb ass!
