A touch of the mediterranean... from Holland!
It's always fun trying international mash-ups like this one. You might not expect to find a Dutch cheese with distinctly Mediterranean flavors, but here it is and the combination works nicely. On first bite, you'll immediately notice the garlic and basil, but the olives and tomatoes add more subtle notes of their own, reminiscent of some garden vegetable cheese spreads I've tried. The gouda itself provides a solid, mellow base for all the herbal spice as well as a hint of nuttiness to the cheese's flavor. All in all, a very complex and interesting cheese that will always stand out on any cheese board. In fact, I made up cheese trays for several parties I attended over the holidays and the Mediterranean Gouda was consistently the first cheese to disappear, a very good sign.

subtle spice nuances within excellent gouda; delicious alone or with a fruity white wine.
