Saxon Creamery's Pastures Cheddar is a meaty cheese, smooth but dense, mellow but full of flavor, creamy, with a sweet taste that lingers. Great cheeses, just like great wines, have the ability to age. Just as a first-growth Bordeaux will evolve as it matures, some outstanding hard cheeses will develop and blossom days – sometimes years – after they are made. One such paragon of aged cheese is Pastures. This raw-milk cheddar, made by Saxon Creamery, isn't just any version of the farm's flagship wheel. Early on, Saxon's cheesemakers recognized that the superb quality of milk and right moisture content, coupled with bandaging of the cheddar, would allow their superb cheeses to age longer. A full three years later, this mature cheddar is ready to taste.
Saxon Creamery is based in the heart of Wisconsin, America's original cheese country. In a sea of large producers, Saxon remains small and artisanal, a family-owned farm where the late founder Ed Klessig referred to his pastures as his cow's "salad bar." Today, son Karl Klessig continues the family tradition of rotational grazing and sustainable farming.
Please Note: Pastures is aged with a natural cloth rind, which can cause a slight blue veining to appear. This is the same mold you find in blue cheeses, which many connoissuers gladly eat, but it can also be cut off if this is not your preference.
