Feta is the national cheese of Greece, and surely the best-known Greek cheese in the US. Our Barrel-aged Feta is produced from December through April from a blend of all-natural milk from free-range sheep and goats, whose milk is richer than cow's milk in calcium, vitamin B and proteins. Curd is molded in large round forms, which are hand-turned frequently as they drain. As the whey drains, the cheese-crafter adjusts timing to perfect each form's texture. After skillful dry-salting, wheels are placed in birch barrels for aging and preservation. There they sit in a 7% brine solution that originally allowed farmers to preserve their milk in the hot Mediterranean climate. Today that brine gives feta its characteristic tang.

By the end of the four-month maturation, a wonderfully creamy, rich, complex flavor is fully developed. The care that goes into this feta is evident by its incredible characteristics. Its traditional method of production contributes to its full taste, natural aroma and pure white color, properties which have established Feta over the centuries as a unique natural cheese of Greece.

Move over imitations
I had heard on TV that only cheese made in Greece should be called Feta. This convinced me that we only get imitations in the U.S. Tangy, creamy, and pretty wonderful.

The best Feta ever.
This cheese made the Greek salad I made sing! I hope it was in Greek. I won't bother to buy supermarket feta ever again.

Feta the Way it Should Be!
I've ordered this several times before & still love it. Perfect texture & tang - & best of all, not overly salty like so many commercial brands. You can actually taste the cheese instead of just salt.

Better Than 60 Yrs. Ago
Last and only time I ever had feta cheese was 60 yrs. ago in a little cafe in Norton Mass. I didn't like it.I'm 78 now, braver, too. I tried again and boy do I love this one! Great with Brisling sardines.

Fantastic
I wanted you to know how fantastic the quality of the cheese was and how wonderful the service was. My Greek cousins thought the cheese was the best they have had - and this is saying a lot. We are a stereotypical Greek family that picks apart food seventeen different ways (all while still eating it, of course). There was nothing to criticize with this cheese. Several family members asked for information on how to order some and we had the lovely card you sent with the cheese to refer them to - also a wonderful touch. So thank you for being such a great part of our reunion and bringing a touch of authentic Greek food to the event. I will also be ordering more of this wonderful cheese - the flavor and consistency is the best I've had. Like being back in Turkey
Feta or Beyaz Peynir is the most eaten cheese in Turkey too. This is a great cheese and took me back to the villages on the Bodrum peninsula where I used to live. Excellent.
