In the Southwest of Ethiopia, the Amaro Mountains are a small range which separate the communities of Amaro on their eastern slopes from Nechisar National Park and the lowland tribal areas of Arba Minch in the west.
One native of the Amaro region has become one of the most inspiring figures in Ethiopian coffee today, her name is Asnakech. She has gained this status because in 2005 she decided to return to her homeland and work on improving the quality of coffee at her mill and the surrounding communities. In addition to Asnakech’s endeavor to improve quality in the Amaro region, she is also the only female mill operator in Ethiopia and has implemented a rigorous quality control system. The result of the hard work is this superior coffee.
Asnakech only purchases cherries at the height of their maturity. Then the coffee follows a highly selective process to ensure no quality is lost. This coffee is processed using the Natural Process, allowing the coffee seed to dry inside of the fruit. The coffee is sun-dried on raised beds. After this, the coffee is sorted to remove any defects that might be present. The final result of this attention to detail is a coffee with a lush berry flavor, complex acidity and juicy body.
