Moosbacher
Part Emmental-style swiss and part washed-rind stinker, this is an exciting cheese is one of our new favorite additions to the igourmet.com line. In a style by itself, the Austrian classic Moosbacher is the only cheese that has a washed rind and large eyes (holes) in the paste, owing to a dual-ripening process. Named after one of the Styrian farmers who supply the milk for the cheese, this cheese is one for the bold! These generous-sized, pasteurized cows' milk wheels are wrapped in linen made just for this purpose, and the flavor has been described as a cross between Dutch Gouda and Alpine cheeses such as Appenzeller or Gruyere. Semi-firm and smooth, it tastes sweet and fruity with a creamy, melting mouthfeel, a bit of spice and pungency, and notes of toasted hazelnuts. While it makes a fine table cheese, it is also a superb melter.
Made from pasteurized cow's milk.

Why is in the
I bought this cheese, having never heard of it before. It was in the "stinky" section. This is a delicious Emminthaller kind of cheese, but a bit softer in texture. But, unless I caught an unusual batch-it isn't stinky. So-if you are trying cheeses that you have never bought before and are put off b/c this cheese is described as stinky-try it.

Just a nice tasting cheese
Sort of like a swiss/fontina hybrid...? To me...cheese is like pizza and sex...there is no bad cheese, pizza or sex...this is a very nice, low key cheese, with nice flavour. Buy again.

One of my all time favorites
mild, has a bit of a "stinker" odor when cutting, soft but firm (holds up to slicing), tastes as described. One of my very favorite for snacking on crackers or alone. Ordered over a. weekend, arrived mid week, packaging is excellent, all the cheeses I ordered were sealed in vacuum packing, the ice packs still mostly frozen, and all the cheeses looked (and tasting great so far). No evidence of mold or other damage.

Very Mild
Cheese is well made ,melts well with a mild taste like a Swiss . If you want a stronger flavor then choose a different type of cheese.

Tasty swiss-type but firmer
Tasty swiss-type but firmer, 5 star, says it all. A good eating cheese. Didn't find it "one for the bold" or stinky or pungent (milk is pasteurized) but not too mild, just right.
