Lovely
I had a hard time finding a vegetarian cheese that would not be strong. This cheese is perfect - it is mild but flavorful.Texture is creamy, but without being liquid-y.

More like Port Salut than brie
A very nice cheese both for eating and melting. One of my wife's favorites (since she doesn't like "strong" cheeses). I thought the consistency was more in the Port Salut / Muenster group rather than the brie group.
