Cashel Blue
Louis and Jane Grubb's Beechmount Farm makes this superb cheese in the rolling hills of Tipperary in Ireland. This county is the heart of horse country and a center for outdoor activity, including pony rides, treks on horseback, fishing, riding, and bird watching. The folks in Tipperary enjoy the good things in life, including their cheese. Cashel Blue is a young, somewhat mild and extra creamy cheese that, unlike inferior blues, is not too salty. It is a fabulous alternative to Gorgonzola or Stilton.
Made from pasteurized cow's milk.

An Excellent Blue
An excellent Blue from the fields of Tipperary, Ireland! It can be used in salads or melted, or just slathered on crackers or bread. It's very creamy.....but still good in salads. Would order it again!

Not in the same class as a good Stilton or Gorgonzola
Interesting, but too salty for my taste, not as subtle as Stilton, and without the satisfying 'punch' of the best Gorgonzola dolce.

This cheese convinced me that I prefer the more traditional blues, like Atalanta and Bavarian. Creamy, yes, but without the punch that makes your taste buds see stars.

Great Irish Blue
When we were in Ireland this past September, we tasted Crozier Blue Cheese made at Beechmount Farm from Sheep's milk. It was exceptional! Cashel is the cow's milk equivalent, and while slightly different, it is very good as well. It has an earthy, creamy taste that exceeds most blues we've tasted. We've now put Cashel Blue on our must buy list.
