Queso Ibores is made in Extremadura, which is the most rugged, least developed, and most economically distressed region in Spain. This raw goat's milk cheese reflects its homeland with its full, simple flavor. It is hard and dense, and becomes sharper with age. During its two-month aging period, the rustic cheese is rubbed with a mixture of olive oil and sweet paprika. It is hard enough to shave over salads and hot dishes and delicious as a table cheese when served with fresh fruits and vegetables.

delicious!
A complex and delicious cheese. Nutty, rich and a wonderful pairing for dried fruit and fruity wines white and red. Best at room temperature.

Not what I expected
The taste was too strong, I don't mind tasty cheese but this one had a strangeness I can't put my finger on.

Very Tangy
Best at room temperature. If its too cold it is a very strong and not that pleasant tasting. Very tasty melted with potatoes.

Excellent, interesting, surprising
Cannot improve on prior review.Initially startled by tangy sour undertaste, then sought it out just for same: belies mild-looking appearance. Red outer color - not a rind - says it all: think about what you are eating first.This cheese emphasizes other milder flavors you pair it with. Very good with nuts and a chilled Madiera.Nice by itself when you need to remember what you are living for.

Goaty-liscious
Most cabra extremena has a much denser, firmer texture (as described by seller). This one is quite silky and only medium-firm. Perhaps something with the shipping? Anyway, if you are yearning for a nip of unabashed goaty-goodness, this assertive specimen will not dissapoint! However, if you are shy about more rustic, robust cheeses, this might not be the one for you. Lovely counterpoint to thin slices of lomo, I might add.
