Good Quality Meat.
The meat was good quality and packaged well. It comes from the farm in dry ice. Although I have cooked much game meat, this was my first time for Elk. I know I need to try cooking again to really get the hang of it. My guest thought it was wonderful. But, here is want I will do different next time. I should have marinade it. It was my intention to do so, but it seemed so tender when it defrosted. Also, I used the grill. I am thinking a cast iron pan with salt and herbs might be a better way. I approached this meat like cooking steak, meaning sear the outside on a high heat, and serve med-rare and that was incorrect. The med-rare part was right, but the searing process made the meat seize ever so slightly. So to compensate I let the steaks rest and then sliced them to serve. Fooled my guest but I knew the truth. I am going to try a cast iron method next time and use a lower heat. Again, the Elk was good on the table. The guests love it. But I think that if I use a marinade and the cast iron pan I can get it more tender.
