San Daniele is not only a ham, but also a place. Located just a stones throw from the Pre-Alps, San Daniele is on the shores of the river Tagliamento. It was in Friuli where San Daniele ham found the ideal environment and the best micro-climatic conditions to become an Italian culinary wealth. The Celts, the first "salters" figured out that this was the perfect place to cure hams with the low humidity, excellent ventilation, and pre-Alpine hillside climate. The Romans carried on the techniques of the Celts and, today, this tradition is protected with DOP status (Protected Designation of Origin). San Daniele Prosciutto is recognized and loved throughout the world.

This little piggy came to town.....
We have the red Berkel slicing machine, and the San Danielle leg of Proscuttio this season, was one of the best we have received from igourmet, to date. Sweet, tender, salty perfection, this little piggy must have been eating wonderful nuts and funghi to have such a delectable taste.

This little piggy.....
The San Danielle parma prosciutto is so sweet and delcious, this is our 3rd or 4th leg, since we got our fancy red machine to slice it thin-1mm--and we enjoy it daily. Better then bacon!

Molto Bene!
Moist, delicious, wonderful proscutto. It lasts us about 6 months, we enjoy daily & with friends and family. Recommend to store it in a wine fridge (like caves of past time) wrapped in unbleached fabric, so it can continue to cure and remain fresh.

Excellent San Daniele!!!
To store it, I cut it in 5 pieces and I used vacuum seal.
