The Danish Cheese Institute rediscovered this old recipe in 1951. Previously known as Danish Port Salut, it is now named Esrom, after the monks who made this forgotten cheese in Esrom Monastery. Made from partially skimmed cow's milk, it is slow-ripened with starter cultures for 10-12 weeks. Esrom has an orange, semi-hard rind that has been rubbed with brine during the aging process. Its interior is semi-soft with a supple texture and irregularly shaped holes. It is full-flavored with a big, rich, pungent aroma and becomes spicier as it ages.

Esrom: The cheese to please your palate with ease!
I was immensely pleased at the receipt of my ½ pound of ESROM cheese ordered by my daughter who lives in California. The cheese was packed perfectly and arrived in excellent and fresh condition. If all shipments are sent in that manner, I am baffled that anyone could submit a complaint of any sort, even about the quality of the cheese. Esrom is a cheese that you either like or don't like. I love it, especially because the aroma is not nearly as apparent when you actually eat it and it has this marvelously pungent flavor. I have to control myself from finishing off a ¼ pound bar at one sitting. I wish there was an Esrom club of sorts! I would want to be president! The only negative I have is the cost of "S & H", which ratchets the price up quite a bit.
