Borgonzola is a Canadian cheese with roots firmly planted in Italy. For four generations the Italian Borgo family has been dedicated to making exceptional cheeses, achieving fame first in Italy, then - with Almerigo Borgo's move in the mid 1950's – in Canada. Borgonzola just took 2nd place in the Blue Veined, Exterior Molding category at the 2012 World Championship Cheese Contest – missing 1st place by only one tenth of a point.
As its name implies, Borgonzola accomplishes its blue-green veining with actual Italian Gorgonzola mold that the Borgo family imports from a town outside of Milan. Borgonzola's interior resembles that of a typical blue but this unique cheese is also soft-ripened making Borgonzola the best of two worlds. In every bite, the velvety blue mold paste delivers a gentle zip of sharpness, while the smooth, bloomy rind accounts for Borgonzola's lusciously mild and creamy flavor, reminiscent of Brie.
Very versatile, Borgonzola is a stand-out on the cheese board with crackers, crusty bread and fruit but can also be used in any recipe calling for blue cheese and it makes a delicious pizza or pasta topping. A must try for fans of sweet Gorgonzola, Cambozola, or Blue Castello.
