Located in County Limerick and recognized as the originator of fine Irish cheese, Marion Cahill of Cahill's Farm has developed an interesting range of flavored cheddars. Using a base of tangy Irish cheddar, she has experimented with a variety of flavors and has come up with some very popular combinations. We offer three types of Cahill's Farm Cheddar: Elderberry, Porter and Irish Whiskey. These semi-soft cheddars are made from pasteurized cow's milk and vegetable rennet. Ireland's Beechmount Farm makes this superb blue cheese. Louis and Jane Grubb own this farm in the rolling hills of Tipperary. This county is the heart of horse country and a center for outdoor activity, including pony rides, treks on horseback, fishing, riding, and bird watching. The folks in Tipperary enjoy the good things in life, including their cheese. Cashel Blue is a young, somewhat mild and extra creamy cheese that, unlike inferior blues, is not too salty. - Cashel Blue: This wonderful farmhouse blue cheese hails from Tipperary. Using only fresh cows milk from their fresian herd, Louis and Jane Grubb have produced this masterpiece. Ideal for melting or after dinner with some port. (8 oz.)
- Dubliner tastes of a mature Cheddar, with the sweet aftertaste of Reggiano. Created by the Irish company Kerrygold and named after Ireland's capital city, this cheese shares traits with several well-known cheeses, but the combination creates a flavor that is completely unique. (8 oz.)
- Cahill Farm Cheddar with Porter Ale is a visually intriguing cheese. Mixed with dark porter ale during the cheesemaking process, this cheese has a marbled effect with dark brown veins. Imported from Ireland, it has a surprising meaty flavor and is obviously a perfect match for ale. (8 oz.)
- Our Shamrock Cheddar is aged for over 12 months and has a creamy, taut texture and sweet, grassy flavor. The milk for this "bitey" cheddar is taken from cows grazing the green grass of southeast Ireland, an area traditionally known as "The Garden of Ireland". This environment produces rich, creamy milk that is perfect for cheese making.

Our Green Waxed Cheddar is produced by Tuxford and Tebbutt from pure Irish milk. The milk for this "bitey" cheddar is taken from cows grazing the green grass of southeast Ireland, an area traditionally known as "The Garden of Ireland". Here, the winds blow in from the Atlantic, depositing rain throughout the year, providing the perfect growing conditions for lush grazing. This environment produces rich, creamy milk that is perfect for cheese making. Our Irish Green Wax Cheddar is aged for a minimum of 12 months, but may be aged longer as it is only when that distinctive strong Irish cheddar flavor is ready that Tuxford and Tebbutt's master grader will deem the cheese ready for sale. The cheddar is then cut into blocks and covered in green wax, giving the cheese a distinctive Irish appearance.- Made from pasteurized cow's milk.

Dubliner was first described to us as a mixture between Cheddar and Parmigiano Reggiano. This description is quite accurate. Dubliner is a robust, aged cow's milk cheese with a bit of a hard
texture similar to a Cheddar. In one bite you can taste the diversity of
flavors - from nutty to sharp to sweet. What might seem ambiguous is
actually a well-balanced mix of cheese cultures and naturally occurring
amino acids. This diversity pays off in its ability to be served
alongside a full-bodied Cabernet, a freshly pulled pint of Guinness, or
simply melted between a few slices of crusty brown bread.

Ivernia is the ancient, lyrical name for Ireland which underlines the cheese's origins. Kerrygold Ivernia is a ripe, hard cheese.
Aged for three years, it is rich in elegant and complex flavors. Cut, grate, slice or shred Ivernia. Long before Kerrygold was ever heard of - in fact, as far back as written records go - dairying has played a starring role in Ireland. In the old days, Irishmen kept cattle for milk more than for meat, and status was derived from the bounty of your herd.
How did cows become the cornerstone of Irish wealth? Simple. Ireland was made for milk. It has everything you need to make a cow happy: good soil, a mild climate, moisture-bearing southwesterly winds, and all the green grass you can chew.
It didn't take long to figure out that happy cows produce amazing milk, which can then be churned into unbeatable butter. As early as the 17th century, Ireland was sharing its butter with the world. Irish boats were being met at the dock by salivating Swedes, Danes, Portuguese, Frenchmen, Spaniards and American colonists - just as Kerrygold butter is today.
The butter is so appealingly golden that it looks as though it has been colored, although the color is natural, coming from the beta-carotene in the intense green Irish grass consumed by the cows. Ireland is a rich, green and fertile land, home to five times as many cattle as humans. Butter and milk have been valued since ancient times and a new generation of cheese makers are now rediscovering old recipes and valuing cheese again. To make their extra sharp Shamrock Cheddar, cow's milk curd is scalded twice and is repeatedly cut and piled in order to remove the whey and break down the curd.
