Stronger than regular Gjetost, it is widely popular among Scandinavians. Children especially enjoy its sweet flavor and fudge-like texture. Traditionally, this cheese is cut into very thin slices and eaten at breakfast with toast or crispbread.

The cheese became popular as a skiers' snack and thus the label on the whole cheese is emblazoned with the words “Ski Queen”. From the top of the world comes Gulost, a Norwegian cheese similar to a fresh Dutch Gouda. This gouda-type from the Land of the Midnight Sun is made by Synnøve, one of Norway's two largest cheese producers (the other being Tine). Enjoy this mild, smooth and delicious cheese at breakfast, lunch, or dinner. A versatile cheese, Gulost melts evenly (think burgers or omelettes) and slices well. |

In Norway, dairy farmers take their cheesemaking very seriously. Jarlsberg is not made on small farms in rural communities, but rather is created in a laboratory setting through a multi-stage, high-tech manufacturing process. The special bacteria that gives the cheese its famous wide-eyed holes and its sugary sweet flavor are cultivated in a controlled environment and added to the curd midway through the cheesemaking process. The result is a beautiful and delicious 20 pound wheel that defines the baby swiss category of cheeses. Jarlsberg was first produced in 1815 and has long since become Norway's most famous cheese and a household name here in America. - Made from pasteurized cow's milk.

Almost extinct, only a handful of dairies in Norway still make Nokkelost. This Norwegian specialty cheese, made from partially skimmed cow's milk, is flavored with cumin seeds and cloves. These herbal additions give Nokkelost a warm, spicy taste. Similar in concept to Dutch Leyden, although with a springier texture, Nokkelost is a festive cheese that is always a hit at parties. It partners very well with beer and wine, especially when served with dark breads, such as pumpernickel.- Made from pasteurized cow's milk.

From the makers of Jarlsberg comes Ridder, the Norwegian word for "Knight." Ridder goes to battle with a creamy, rich, distinctive flavor and is often compared to French cheeses like Port Salut or St. Nectaire. Like those, it is semi-soft with little or no holes. But, unlike its French counterparts, Ridder has an edible washed rind. Considered by some to be the most elite Norwegian cheese, Ridder is an ideal table cheese and pairs well with a light, fruity wine.- Made from pasteurized cow's milk.
