This smoked cheese comes from Mragowo, the northeastern-most part of Poland, home to the Mazurian Lake district. A longtime summer resort area for well-to-do Poles, Mragowo is also noted for its lush farms and robust dairy production. Damski, which is naturally smoked over wood embers, is a semi-soft variety with a pleasant, sweet flavor combined with the typical qualities of any smoked cheese. Its burnt rind and smoky aroma make it one of our favorite specialties from Poland.

Produced in Poland, Koldamer can be considered a Baby Swiss-type cheese that is very similar to Tilsit, only less pungent. Aged for approximately four months, this semi-firm, pale yellow cheese offers a mild and nutty flavor. Its texture is smooth and dotted with small random holes resembling its German cousin. Koldamer's versatility allows you to enjoy it simply as a table cheese or melted in your favorite sandwich.

Lubelski is a town in the Lublin region of Eastern Poland. This region is mainly agricultural and lies between the Vestula and Bug rivers. The soil is rich and sandy because the region had been an inland sea 200 million years ago. Mild and somewhat dry, Lubelski is an excellent basic for your kitchen. It melts easily and has a flavor and texture similar to Mozzarella. Eat as a table cheese with beer,or use for melting, cubing in a salad, or for Poland's famous cheesecake, Sernik, served at Easter time. Lubelski also makes an excellent pizza topping.

The food of Poland is primarily dependent on the country's soil and climate. A country whose borders have changed dramatically throughout its history, however, Poland has a cuisine that has absorbed the influence of the various people who have lived within them. French, Italian, and perhaps most obviously, Russian flavors and dishes are present throughout Polish cuisine. Despite these influences, the Polish predilection for simple, substantial dishes have remained. This cheese is an example of that preference. Morksi is a semi-soft cheese with a very mild, pleasant flavor. It is not at all complex or intimidating and is, therefore, a safe bet when serving a crowd or for everyday eating.
