Made in Monroe, Wisconsin, Beer Kaese is a robust, American classic with a German/Swiss pedigree. Containing no beer, this cheese was registered in 1933 as a celebratory salute to the repeal of Prohibition, hence the name “Beer” Kaese. The unique flavor of Beer Kaese comes from aging. It is shelf-cured, resulting in a golden yellow rind. Beer Kaese has an earthy, slightly tangy, full-bodied flavor which makes it an excellent pairing with rye or pumpernickel bread and a slice of onion with a glass of red wine or, preferably, beer. Alternatively, try this cheese served for dessert with a glass of port.

Here by popular demand, we bring you Bel Paese. Invented in Lombardy in 1929 by the Galbani Cheese Company, Bel Paese (Italian for "beautiful country") is now made in Wisconsin. Dante used the phrase "Bel Paese" to describe Italy, which inspired Galbani's name for this Italian-style cheese. It is a semi-soft, uncooked, pressed pasteurized cow's milk cheese with a wax rind. Made in small discs, it is a pale, creamy yellow, and has small holes within its texture. Bel Paese has a mild, buttery flavor, similar to mozzarella but with more body and tang. A versatile cheese, Bel Paese is suitable for cracker-snacks or as a dessert cheese. It also melts well, making it perfect for casseroles or pizza. Savor Bel Paese paired with a light Chardonnay.

Black Mesa Ranch is a 280-acre working goat ranch located just east of the historic pioneer town of Snowflake in the beautiful White Mountains of Arizona. The ranch started making cheese in 2003, becoming the only certified goat dairy in the state of Arizona. Located off-grid, Black Mesa Ranch produces its own electricity using solar and wind technology.

Black Mesa Ranch's cheeses are true farmstead products, made exclusively from the milk of their own Nubian goats. These goats, of African descent, are well suited for Arizona's hot climate. Unlike goat cheeses from temperate parts of the globe, the heat, lack of humidity, and desert plants eaten by the goats produce a flavor that is distinctive and unique. All Black Mesa cheeses are handmade in small batches to ensure attention to detail. Their superb Jalapeno Chevre is fresh, soft, and clean on the palate. Bonne Bouche is the “flagship” of the Vermont Butter & Cheese company's new signature line. This hand-ladled, ash-ripened cheese was first introduced in 2001. “Bonne Bouche” literally means “good mouthful” and is a French term used to describe a tasty morsel. Bonne Bouche is simply that and won instant acclaim among chefs, retailers and food writers. It won first place for aged goat cheese at the American Cheese Society competition.

Bonne Bouche is made from pasteurized milk and set in tubs for lactic coagulation for 24 hours. The following day, the cheese curd is carefully hand ladled into molds and drained overnight. The cheeses are then unmolded, ashed, and moved into the drying room and then into the aging room where the controlled environment is cool and humid. The entire process takes seven to ten days before the cheeses are packaged in their individual micro-caves.

Bonne Bouche can be enjoyed fresh or aged up to 45 days. As a young cheese, the rind has a distinct geotrichium flavor. The texture is mild, yet still acidic- like a fresh chevre. As the cheese ages, it becomes softer and the rind becomes drier and piquant.

Founded in 1885 by five dairy farmers, Chalet Cheese Cooperative continues to flourish as a cooperative, owned and operated by its 29 members. They specialize in the making of Limburger, Brick and Baby Swiss, with an emphasis on top quality and true workmanship. They are the only producers of Limburger in the United States, and their German Brick with a Limburger smear underscores their spirit for innovation.

Brick is the oldest cheese type to have originated in the USA, first created in 1875 by John Jossi, a native of Switzerland living in Lebanon, Wisconsin. Myron Olson has been crafting cheese for over 30 years and is the manager of Chalet Cheese Cooperative Brick where he makes this Wisconsin original. Flavor changes from mild and sweet, with a touch of nuttiness when young to pungent and tangy when aged. Brick is surface-ripened with a smooth, open texture. As it was early last century, Cabot is still a sleepy little farm town tucked into the rocky soil of Northern Vermont's rolling hills. Located there is the Cabot Creamery, a dairy cooperative dedicated to creating world-class cheddars while supporting the hard-pressed independent farmers who supply their milk. Established as a cooperative in 1919, the dairy farmers actually own the company! Cabot's best cheddar is called "Vintage Choice." Each block of Vintage Choice is hand-selected by Cabot's president. Aged undisturbed for 18 to 24 months, limited edition Vintage Choice is complex, opulent and full of nuances. After this long aging period, it takes on a full-bodied, rich, extra-sharp flavor. Cabot's finest cheddar has a texture that is more compact and a bit drier than authentic English Cheddar - different, not better or worse. Nestled amongst the rolling hills and lush pastures of central Wisconsin, Carr Valley cheese remains one of Wisconsin's traditional cheese plants, famous for its cheddar varieties made the old-fashioned way. Owned and operated by the Cook family, Carr Valley will celebrate its 100th anniversary this year.

We had the good fortune of being placed next to the folks from Carr Valley at the annual wine festival in Kohler, WI. They were featuring their Cocoa Cardona, which we loved immediately. Made from 100% goat's milk, this cheese is aged and rubbed with cocoa. Cocoa Cardona won 1st Best of Class in the U.S. Cheese Contest in 2003. Thanks to this gem, we have since pursued some of their other wonderful cheeses.

Cheesemaker Dave Cass is very proud of Westfield's many national awards, including Best of Show at the American Cheese Society's 1996 annual convention.

This unique 4.5 oz goat log is Westfield Farm's flagship cheese. Westfield Farm has been handcrafting award-winning farmstead cheeses in Hubbardston, Massachusetts since 1971. Located on 20 acres in the central part of the state, the farm turns out a little over 900 pounds of cheese per week. Their Capri Classic Blue Log, the first prize winner at the 1999 American Cheese Society's Annual Judging, is one of only a very few external blue chevres made in the world. Served in a number of America's finest restaurants, it is often seen as the focal point of a fine cheese board or as a medallion placed atop a filet or vegetable dish. Its powdery blue rind is a striking color that develops on the surface and slowly ripens toward the center. A wonderful cheese for a true connoisseur.
