One of the rarest, most sought after Dutch specially-cured cheeses has been made in the southern provinces of the Netherlands for over 800 years - Extra Aged Farmer Gouda. Easy to distinguish, it is the dairy world's equivalent of a Rembrandt or Van Gogh. This edible opus magnum has been matured for eighteen months, allowing its body to develop a muted caramel color, matched by an intense flavor with a sweet finish. Extra Aged Gouda can be grated or chunked.
Our Extra Aged Gouda is aged 18 months and is produced by CONO Kaasmakers under the Beemster brand. CONO is located in Northern Holland, famous for its rich milk and fertile grazing land. - Made from pasteurized cow's milk.

We experienced a moment of culinary divinity when we first sampled this double-aged Gouda. Previously, we doubted that any cheese could be more flavorful than Beemster's 18-month Aged Gouda, but their X.O. indeed sets a new bar. With this 26-month gouda, we first noticed its delicate, brittle texture. After we tasted it, the flavor of butterscotch permeated the palate, followed by alternating waves of whiskey and pecan.- Made from pasteurized cow's milk.

Made in Monroe, Wisconsin, Beer Kaese is a robust, American classic with a German/Swiss pedigree. Containing no beer, this cheese was registered in 1933 as a celebratory salute to the repeal of Prohibition, hence the name “Beer” Kaese. The unique flavor of Beer Kaese comes from aging. It is shelf-cured, resulting in a golden yellow rind. Beer Kaese has an earthy, slightly tangy, full-bodied flavor which makes it an excellent pairing with rye or pumpernickel bread and a slice of onion with a glass of red wine or, preferably, beer. Alternatively, try this cheese served for dessert with a glass of port.

This brie-like blue cheese from Denmark is made by Tholstrup, the same company that makes Saga Blue at its factory in the United States. Blue Castello is richer than Saga Blue and is made only in Denmark. Castello is a distant derivative of Italian Gorgonzola but has a higher fat content and a milder flavor. Although Germany is a country with a massive dairy industry, their cheeses remain relatively unknown to those of us outside its borders. One reason for this could be the majority of German cheeses are simply imitations of its neighbor's specialties. However, there are exceptions. Bruder Basil comes to us from Bavaria and is made in the tradition of Rauchkäse, a smoked cheese typical of the region. Originally, Basils were manufactured by Trappist Monks in the Abbey of Rotthalmunster. In 1902, Basil Weixler founded the Bergader Private Cheese Dairy. Today, Bergader still works in accordance with this old tradition of craftmanship. It is still smoked over selected beech wood, which gives it its special flavor. This semi-soft cows milk cheese has a darker, natural rind and a rich, creamy texture. With its smoky flavor, Bruder Basil is ideal for grilled sandwiches; as an alternative to raclette and gratins; and perfect for snacking with your favorite dark German beer or dry white wine.- Made from pasteurized cow's milk.

Queso Cabrales is a natural cheese made in the artisan tradition by rural dairy farmers. This cheese can be made of pure cow's milk, but, depending on availability, it can also be blended with some goat and/or sheep's milk as well. All the milk used in its production must come exclusively from herds raised in a small zone of production in northern Spain. Cabrales is aged from two to six months in natural caves in the mountains nearby. In these caves, the relative humidity is 90% and the temperature varies between 45º and 55ºF. These conditions favor the development of penicillium molds, yielding veins of blue-greenish color. Cabrales is sharp and tangy, and even more so when made with mixed milks. Like Gorgonzola and Roquefort, it is a famous blue cheese whose name is often copied by inferior wannabees.
Note: Contrary to popular belief, all imported Cabrales is wrapped in aluminum foil, not leaves (due to EU regulations). Spanish blue cheese wrapped in leaves is either called Valdeon or Picon. - Made from pasteurized cow, goat, and sheep's milk.

Cambozola, which is made by Kasseri Champignon in Bavaria, is a rich and creamy Camembert-type cheese with a bloomy white rind. Beneath its crust, one finds streaks of tangy blue. Hence its name: the marriage of Camembert and Gorgonzola gives us Cambozola. Very popular all over the world, Cambozola is the perfect addition to the after-dinner cheese course and pairs well with fruit and nuts.- Made from pasteurized cow's milk.

From the very outset, the wines of Champagne were prized above all the vineyards of Europe. Over 24 million bottles are sold in the U.S. every year. Here are a few cheeses we enjoy with champagne:
- Chevre by Couturier: It's nice that CHampagne and CHevre both start with CH, because the two pair perfectly together. This young, fresh goat cheese comes to us from France's Loire Valley, near the important city of Nantes. Its mild tanginess makes for great nibbling while sipping Champagne.
- Kerrygold Irish Cheddar: This connoisseur's cheddar, notable for its rich, rounded flavor and firm, smooth body, deserves a place on the cheese board alongside your choice of the world's other great cheeses.
- Camembert: The most famous cheese from Normandy, it has a white mold rind and a rich, creamy interior that pairs delightfully with fine Champagne. (8 oz)
