Northwest of Venice, tucked beneath the Dolomite Mountains, artisan cheesemakers produce Asiago using traditional methods: no computer-operated machinery or temperature-controlled rooms, just cows and grass, men and women, and an abundance of Asiago. This reserve stock, slow-ripened Asiago is aged for a full year as opposed to regular Asiago d'Allevo's six month span. As a result of the additional maturation, this cheese takes on a distinct but pleasant sharpness with hints of butterscotch. Its texture is firm enough to grate, yet allows it to be served as a delicious table cheese as well. Bigio is a unique sheep's milk cheese brought to us from Italy by Il Forteto. This semi-hard cheese is traditionally matured for five months and then matured under ash for an additional two to three months. This method of aging is done to speed up the process, according to an old farmer's tradition, and continues today. While ripening under the thick layer of ash, moisture is absorbed, both preventing the formation of mold on the rind and removing acidity, leaving a sweet and tasty pecorino cheese. Instead of a blend of sheep and cow milk, Stagionato is made from pure sheep's milk. Brillo di Treviso combines these two Italian classics, cheese and wine, in beautiful harmony. This wine-washed cheese comes to us from Venice, where it is made from pasteurized cow's milk and washed with red wine. Because the cheese is made in individual 12-14 ounce wheels, each bite tastes distinctly of robust, fruity Italian red wine. The thin wine-bathed rind encases an ivory colored, semi-soft cheese with a slight tang that nicely complements the wine. Ideal as a table cheese, brillo also melts beautifully.
