Abondance, a name-controlled cheese from the Savoy region of France, is made with fresh partially-skimmed milk and formed into 20-pound wheels. This extraordinary cheese is similar to Gruyere de Comte, but more complex and buttery. It has a firm texture, nutty flavor, and a distinctive fruitiness. While the strong aroma of this cheese may be a bit off-putting, the flavor is divine. In addition to being a delicious table cheese, Abondance melts nicely and is often substituted for Raclette.- Made from unpasteurized cow's milk, aged over 60 days.

Unlike our other French Camembert, this one comes from Normandy, where Camembert was first created in 1791 by Marie Harel. During the French Revolution, a recalcitrant priest from Brie (the village, not the cheese) arrived at the Manor of Beaumoncel in the village of Camembert and was hidden there by Marie Harel, a farmer. Following the direction of this priest, she created Camembert. The recipe was a success and her children and grandchildren continued the family tradition. Over time, word spread and Marie's cheese became famous all over the world.
Camembert Le Châtelain is an excellent example, with a recipe that is true to the original. It is succulent, ripe, rich and creamy. Only gently pasteurized at moderate temperatures, Camembert Le Châtelain retains most of the authentic flavors and qualities of the raw-milk cheese you can buy only in France. Excellent served with light reds from the Loire Valley or champagne, in Normandy this cheese is paired with an apple liqueur called Calvados. Apples, Camembert and Normandy are inextricably linked. Norman dairy farms are peppered with apple trees that protect the rich soil. In fact, some people claim to be able to taste a hint of apple beneath the creamy suppleness of fresh Camembert.

Covered with forests and pastures and crossed by numerous rivers, the countryside of Chimay has always been a livestock-rearing area, and dairy herds mean cheese! Since 1876, the Trappist monks of Scourmont have known the secrets of making this semi-hard cheese made from milk from their farm and matured in the vaulted cellars of the abbey. Chimay Grand Cru is a semi-hard pressed cheese. The rind is natural, non-coloured, without preservatives and slightly flowery. Myron Olson has been crafting cheese for over 30 years and is the manager of Chalet, the only cheese factory in the United States still producing Limburger cheese. He is a Wisconsin Master Cheesemaker, certified first in Limburger. "There are still plenty of people who appreciate a full-flavored cheese," he says. Myron's Limbuger is a semi-soft cheese with origins from Belgium. Limburger is a pungent smelling, surface-ripened cheese that pairs well with hearty rye breads and even a slice of onion.

Tilsit is a surface ripened cheese first made by Dutch settlers in East Prussia, near the town of Tilsit, in the mid-19th Century. They were trying to recreate their beloved Gouda, but the cheese became infected with moulds, yeasts, and bacteria in a damp cellar and so, Tilsit was born. Also known as Tilsit Havarti, this cheese has a fuller and more intense flavor than Havarti, but is milder than German Tilsit. Made of partially skimmed milk with a brownish-orange washed rind, Danish Tilsit is more yellow in color than Havarti but has a similar springy, elastic, semi-firm texture, ideal for slicing. Danish Tilsit also has a piquant flavor, making it a great table cheese to enjoy with a Danish beer. The Danish Cheese Institute rediscovered this old recipe in 1951. Previously known as Danish Port Salut, it is now named Esrom, after the monks who made this forgotten cheese in Esrom Monastery. Made from partially skimmed cow's milk, it is slow ripened with starter cultures for 10 - 12 weeks. Esrom has an orange, semi-hard rind that has been rubbed with brine during the aging process. Its interior is semi-soft with a supple texture and irregularly shaped holes. It is full-flavored with a big, rich, pungent aroma and becomes spicier as it ages.- Made from pasteurized cow's milk.

Schoenegger Kaese-Alm has created a classic Bavarian cheese. They use fresh, unpasteurized milk from cows raised on mountain farms in protected regions of Europe where they are fed on fresh grass and hay. They were granted a special license from Prince Luitpold of Bavaria (great grandson of the last King of Bavaria, Ludwig II), to make Konig Ludwig Bierkase. König Ludwig Dunkel is a bottom-fermentation dark specialty beer, produced in accordance with traditional Bavarian brewing methods. This special beer is made in one of the last castle breweries in the heart of Bavaria, south of Munich in Kaltenberg Castle.
König Ludwig Bierkäse is a delicate yellow, semi-hard cheese with small holes ripened in fine King Ludwig dark beer to give it its hearty taste. This Dark Beer Cheese melts well for cooking, but is just terrific on its own or served with hearty German bread and a good beer.- Made from unpasteurized cow's milk.

Almost universally known today as a stinky German cheese, Limburger was originally created by Belgian Trappist monks. The Germans, noted in the dairy world for their mimicry, latched on to the Belgian recipe and made it their own. Strangely enough, in the 1880's, a New Yorker named Emil Frey copied the recipe for Limburger and created Liederkranz - in effect, creating a copy of a copy! This pasteurized cow's milk cheese has a tangy, creamy, Brie-like flavor with an incredibly pungent aroma. This perfume, which is caused by bacteria living in the rind, indicates a strong tasting cheese. However, Limburger is actually fairly tame, especially when you trim the rind. It is best when served with plenty of cold beer. Other good accompaniments are tinned fish, onions, crackers, fruits, and vegetables.- Made from pasteurized cow's milk.

Named after a village in Normandy, Livarot is a very strong smelling cheese. For those of us who can withstand the smell however, it is one of the world's great eating cheeses with a smooth, ripe, slightly spicy flavor. Its rind is encircled with straps of paper that prevent the cheese from collapsing during maturing. The straps are reminiscent of a colonel's stripes, giving the cheese its nickname "The Colonel". A young, soft cheese that becomes runny at room temperature, Livarot is a true gourmet item in the French tradition.

The first wheels of Morbier ever produced were made from milk leftover from Gruyere de Comte production. The cheesemaker would press the leftover curd from the evening production of Comte into a mold and cover it with a thin layer of ash to prevent it from both drying out and attracting flies. The next day, he would add the leftover morning curd on top of the ash. The result is a two-layered semi-soft cheese with a complex fruity flavor and a slight tang. The two layers of the cheese have slightly different flavors, with the layer from the evening milking tasting fruitier than that from the morning milking. The ash not only separates the two layers of the cheese; it also serves an aesthetic purpose as it makes a dramatic presentation. Morbier is made using pasteurized cow's milk and has a complex, bold flavor. Its yellow-ivory interior has a smooth texture, wrapped inside a creamy-brown crust. This cheese pairs well with French Saucisson or is great on a sandwich made with a crusty bread. It also melts beautifully.
