Produced in Northern Sweden, Vasterbotten is aged for over 11 months and thus is dry, reminiscent of a young Parmigiano Reggiano or an aged Cheddar. Herrgardsost is the most popular type of cheese in Sweden and has been produced since the 18th century, when it was created by a Swedish cheese master. Our version, named Vadenost after the Swedish port city, has a similar flavor but distinctly softer texture than English Cheddar. Although made from pasteurized cow's milk, Vadenost maintains a full-bodied, slightly grassy flavor.
