Once referred to as "poor man's caviar", bottarga is the salted, pressed and dried roe of mullet. This specialty of southern Italy is harvested from the mullet, then salted and massaged by hand for several weeks. It is then pressed and sun- dried for up to two months. Bottarga has a salty flavor that reminds one instantly of the sea. This bottarga is pre-grated and sold in a 50g jar. While 50g may sound small, a little bottarga can go a long way. Sprinkle some over spaghetti and toss with olive oil and red pepper flakes for a delicious entree. Use your imagination - serve it as a bread topping, salad ingredient, or in rice dishes.

Due to popular customer demand, igourmet.com is proud to offer our customers this whole lobe of bottarga for them to grate at their leisure. Bottarga is salted, pressed, and dried grey mullet roe. This ancient tradition has been kept by Sardinian fishermen and is now brought to your kitchen. This bottarga is wonderful either grated on salads, with simple pastas, or thinly sliced on crostini with an olive pate, a curl of butter or simply drizzled with extra virgin olive oil. Once opened, this bottarga can be stored in the refrigerator. For long-term storage, do as Mario Batali and wrap it in foil and keep in the freezer. Then, just grate off the block whenever you need to add some flavor to special dishes.
