The spoonbill, also called the paddlefish, is a peculiar, prehistoric fish that thrives in the waters of the Mississippi. It is a member of the sturgeon family, so its caviar is like that produced by the more famous Caspian Sea sturgeon, albeit at a much more affordable price. The spoonbill's caviar is quite delectable; rich, robust and creamy with small silvery pearls.

Lumpfish caviar is an excellent alternative to pricier Caspian Sea varieties. This specialty caviar is a perfect addition to a gourmet meal; used as a substitute in recipes calling for the more traditional roes. It also makes a beautiful garnish, especially alongside sushi. Originally from Iceland, ours is from neighboring Sweden.

California Estate Osetra is brown-black in color with a medium-sized egg. A truly revolutionary caviar. Produced monthly at an aqua farm in California's Central Valley, this is the freshest caviar available on the market- clean, smooth, buttery and environmentally sound.

This caviar comes from farm-raised sturgeon. That means that the natural resources are not depleted to produce the caviar. That's quite an important aspect, considering that all 27 species of sturgeon are on the endangered species list. The sturgeon swim in clean Artesian well-water and are fed an all natural feed. The final product - the caviar, in this case - has a fresh and clean, buttery finish. Serves two to four people.

Once referred to as "poor man's caviar", bottarga is the salted, pressed and dried roe of mullet. This specialty of southern Italy is harvested from the mullet, then salted and massaged by hand for several weeks. It is then pressed and sun- dried for up to two months. Bottarga has a salty flavor that reminds one instantly of the sea. This bottarga is pre-grated and sold in a 50g jar. While 50g may sound small, a little bottarga can go a long way. Sprinkle some over spaghetti and toss with olive oil and red pepper flakes for a delicious entree. Use your imagination - serve it as a bread topping, salad ingredient, or in rice dishes.

Abba brand Caviar Spread is one of Sweden's best selling food products. In 1954, Abba spent 1,000 Swedish Crowns to buy its recipe. Today, that top secret recipe is safely locked in a bank box. Made with smoked cod roe and dill, this is an easy last minute snack for any gathering. Hors d'oeuvres are a snap as the tube opening is ribbed to create attractive ribbon piping.
  • Abba pate and spreads were featured in Saveur Magazine's Top 100 Favorites, January/February 2006.

Due to popular customer demand, igourmet.com is proud to offer our customers this whole lobe of bottarga for them to grate at their leisure. Bottarga is salted, pressed, and dried grey mullet roe. This ancient tradition has been kept by Sardinian fishermen and is now brought to your kitchen. This bottarga is wonderful either grated on salads, with simple pastas, or thinly sliced on crostini with an olive pate, a curl of butter or simply drizzled with extra virgin olive oil. Once opened, this bottarga can be stored in the refrigerator. For long-term storage, do as Mario Batali and wrap it in foil and keep in the freezer. Then, just grate off the block whenever you need to add some flavor to special dishes.

Please Note: This is a natural, artisan product and the color of the bottarga may vary from a burnt orange to a dark indigo color.
