The centerpiece of festive dinners and celebrations, coucous is traditionally a way of saying “good luck and blessings” at the dinner tables of North Africa. This Whole Wheat Couscous is produced in Israel and has a nuttier, chewier texture than regular couscous. It stands up well to heavy spices and robustly seasoned meats.
The Chriqui Family brought the tradition of serving couscous with them from Morocco, to France, and then to Israel. As the story goes, when the youngest Chriqui son requested his favorite meal in their new home, it was discovered that couscous was unknown and nowhere to be bought. Not wanting to deprive his son of the traditional flavors of home, David Chriqui set about producing his own. Starting out as a small family business, it grew into a modern manufacturing facility producing easy-to-prepare couscous that satisfied not only the domestic market, but pleased palates around the world.

Israeli Couscous was created specifically for the Israeli market in the 1950's during a national recession. Made of hard wheat instead of semolina, it has become a staple of the Israeli diet. This couscous features large granules that hold a sweeter, nuttier flavor, which is achieved by a toasting process that caramelizes the starch. This allows it to absorb liquids while remaining “al dente”. It makes a perfect side dish to meat, poultry or fish. It is also delicious as a main course; mixed with vegetables; or with your favorite pasta sauce. It is also great as a cold pasta salad.- 10 minute preparation time.
