Named after a small rural town in the French Alps, a whole wheel of this cheese weighs over 80 pounds. We found it to be creamier and richer than other Alpine cheeses like Emmental, Gruyere, and Comté. This raw cow's milk cheese is aged up to eight months in rural Alpine cellars.

With each bite, hints of various grasses, herbs, and wildflowers are notable to those with sensitive palates. Its flavor is nutty, creamy, and sweet. Like Gruyere, Beaufort melts well and is perfect for fondue and hot sandwiches.
