Casale Toscano Cooked Grape Must Condiment
These thick and tart syrups are similar to Italian
where the leftover grape skins and seeds from the wine press are cooked down and allowed to acidify. Somewhere between balsamic vinegar and wine jelly, these syrups have a darkly shining color and a taste with notes of fruit and wood, as the must is packed in barrels and aged. Each syrup is made from a monovarietal of cooked grape must and has slightly different characteristics from the sharp and persistent flavor from the given grapes of origin. These syrups are ideal with a variety of foods, from hard cheeses and grilled meat to fresh strawberries and cream. Or drizzle a bit over roasted squash or grilled peppers.
