In this secluded setting, the farmers of Sierra de Cazorla grow their olives and watch for the first olives to ripen in November, which are pampered for a unique flavor and aroma that can be acquired only in such a perfect balance of soil, climate, and human skill. The process of collecting and processing olive oil is usually carried out in December, but for Elizondo this process takes place between late October and early November. The early collection of the olives raises a problem of lower yield in Elizondo's harvest. But the solution is clear; Elizondo's founders prefer a lower yield and in return get unique oil, different from any other conventional oil.
This beautiful olive oil is packaged in a gift-quality bottle with a built in mister. Use this bottle to spray a fine mist of olive oil over fish, shellfish, grilled poultry, or steamed vegetables.
